Oat Milk French Toast Bake

Whether you have a hectic morning “on-the-go” or you want something to enjoy while slowly sipping your morning coffee, this Oat Milk French Toast Bake is the perfect breakfast option. Beautifully baked, deliciously creamy, and slightly sweet!

Thanks to a touch of maple syrup and homemade JOI Oat Milk, this French Toast bake is not overly sweet but still feels decadent. The custard for this baked casserole leaves out traditional heavy cream and replaces it with a lighter, delicious creamy Oat Milk!

Cinnamon and cardamom bring the spice, while the fresh blueberries and banana round out the beautiful baked breakfast! Top with a little extra maple syrup for sweetness and you have a gorgeous breakfast in no time.

Ingredients

¼ cup JOI oat milk powder or oat creamer (or substitute ⅓ cup JOI paste, any flavor)
1 cup water
3 eggs (or 3 flax eggs)
1 Tablespoon cinnamon
½ Tablespoon cardamom
3 Tablespoons maple syrup
1 loaf brioche bread, cut into 1 inch cubes
1 cup blueberries
1 sliced banana
Extra maple syrup for topping

Directions

In a large mixing bowl combine the JOI oat milk powder with water and whisk to combine. Or, if using a paste, blend water with JOI in blender for best results and then add to mixing bowl.
Whisk in 3 eggs, cinnamon, cardamom, and maple syrup and combine well.
Cut the brioche bread into 1 inch cubes and place in a baking dish (9x9 works well!)
Pour the custard over the chunks of bread and lightly press down to submerge each piece.
Top with ½ cup of blueberries.
Bake at 375 for 25 minutes until the top is golden brown and the custard has set all the way through.
Remove and let cool slightly. Top with extra blueberries and sliced banana.
Drizzle with maple syrup and enjoy.
