The Complete Dairy-Free Creamed Corn Recipe for Healthy Eating

End of summer is the perfect time to use up all of that sweet corn. This dairy-free twist on a classic cream style corn combines tangy green chiles and JOI for tons of flavor and creaminess, without the dairy!  This can be served year-round if you're using frozen corn, and is a great dinner side dish for your average weeknight or a holiday meal.

The answer is yes!  When you use JOI cashew or almond plant base in place of traditional dairy milk, cream, cream cheese, or butter, you retain the thick, creamy, delicious texture and taste that traditional dairy delivers.  Plus, you create a much healthier alternative dish. 

Our Vegan Creamed Corn:  Easy to Make and Versatile!

The beauty of this vegan creamed corn recipe is that it's super easy to put together. Instead of adding a cup of cream, you add some JOI cashew or almond base. The base takes the hassle out of having to plan ahead and soaking, straining and blending the nuts...before you tackle the actual recipe. 

It's also a quick recipe to whip up and works perfectly as a side dish or on its own.  Top it with your protein of choice, or extra veggies (fresh arugula or spinach, chopped tomatoes) for a delicious meal. Serve warm or eat cooled down as a snack.  This could even work well as a breakfast dish, alongside a scramble or topped with a bit of maple syrup and fruit!

The day after you make the recipe, you can add some vegetable broth to the dish, and it becomes a tasty corn chowder. 

You can use frozen corn or fresh corn for the dish; they both work well! You can also choose to omit the chilis.

Is Dairy-Free Creamed Corn Healthy?

The answer to this question is yes! The reason this recipe was created was to offer a healthier alternative to cream- or butter-laden creamed corn. 

We all know that dairy products are high in saturated fat, and we should lower our consumption of them. The dairy-free alternative is lower in saturated fat and free of added sugar, and salt than a traditional creamed corn recipe. What's more, it tastes just as delicious as its dairy-filled counterpart!  Plus, when you use JOI, you add a boost of protein, fiber and healthy fats, thanks to those almonds (or cashews).

Creamed Corn with Green Chilis Recipe

Serves 4-6 


  • 3 - 4 ears of fresh corn, kernels cut off the cob (or 10 ounces frozen corn or frozen sweet corn)
  • ½ cup JOI plant base (cashew or almond)
  • 1 cup water
  • 1 4-ounce can of green chiles, or substitute mild green chilies, such as Anaheim, banana or poblano peppers.  Or substitute diced fresh green pepper.
  • 1 teaspoon sea salt or 2 teaspoons kosher salt
  • ½ teaspoon black pepper 
  • Chopped chives and green onion for topping


  1. In a skillet over medium-high heat add corn kernels and green chiles. 
  2. Season with salt and pepper.
  3. Cook on medium heat for 5-10 minutes, stirring regularly, until the corn is tender and warmed through, and the fresh green pepper is cooked (if using). 
  4. Remove 1 cup of corn mixture from the pan and add it to a blender jar with JOI and water. Blend well.
  5. Add this blended mixture back into the skillet of corn and stir to combine. Remove from heat.
  6. Garnish with chopped chives and green onion. Enjoy!
