JOI makes this whole salad come together. Mixed with soy sauce, vinegar, ginger and sesame oil, it turns into an ultra creamy dressing that you’ll want to put on everything. It gives our slaw salad a creamy touch and really gets better the longer it sits in the dressing.

Asian Broccoli Slaw Salad

Salad

  • 1 bag of broccoli slaw (contains broccoli, red cabbage, shredded carrots)
  • 2 cups chopped kale
  • 1 cup chopped cilantro
  • ¼ cup roasted peanuts

Dressing

  • ¼ cup JOI plant base
  • 2 TB unseasoned rice wine vinegar
  • 1 TB soy sauce, tamari, or aminos
  • 1 TB honey, agave, maple syrup
  • 1 tsp toasted sesame oil or other nut oil
  • ½ inch piece of fresh ginger
  • 1 TB water as needed, more to make dressing thinner
  • Optional pinch of cayenne pepper.

Instructions

  1. Combine all salad ingredients in a large mixing bowl and toss to combine.
  2. Combine all dressing ingredients to a blender cup and blend until smooth.
  3. Pour the dressing over the salad and toss to fully incorporate. Top with a few extra peanuts!
