Classic Banana Bread Made With JOI

Ingredients
1 cup JOI
- ¼ cup maple syrup or honey
- 1 egg or vegan egg substitute
- 1 cup mashed ripe bananas (2-3 bananas)
- 1 tsp vanilla extract
- ¼ tsp salt
- 1 tsp baking soda
- 1 tsp cinnamon
- A pinch of nutmeg
- ¾ cup chocolate chips or cacao (optional)
Directions
Preheat oven to 350 degrees. Grease an 8 inch square (or 9 inch round) cake pan and line the bottom with parchment paper
- Place all ingredients (except optional choc chips) in a mixer or blender and blend until completely smooth and well combined
- Stir in chocolate chips if using
- Pour batter evenly into prepared cake pan and bake for 25 to 35 minutes until just set and a toothpick comes out clean
- Cool for a few minutes before removing from pan and transfer to a cooling rack to cool completely
