MOUTH WATERING BANANA BREAD

This cake is so full of JOI, it’s bananas! B-A-N-A-N-A-S! 🍌

What’s in it:

  • 1 cup JOI
  • 1/4 cup maple syrup or honey
  • 1 egg or vegan egg substitute
  • 1 cup mashed ripe bananas (2-3 bananas)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • A pinch of nutmeg
  • 3/4 cup chocolate chips or cacao (optional)

Here’s how:

  1. Preheat oven to 350 degrees. Grease an 8" square (or 9" round) cake pan and line the bottom with parchment paper
  2. Place all ingredients (except optional choc chips) in a mixer or blender and blend until completely smooth and well combined
  3. Stir in chocolate chips if using
  4. Pour batter evenly into prepared cake pan and bake for 25 to 35 minutes until just set and a toothpick comes out clean
  5. Cool for a few minutes before removing from pan and transfer to a cooling rack to cool completely
  6. EnJOI!
