Make the Recipe
Yields 8 servings
- 1 Tablespoon of olive oil
- 1 28 ounce can of crushed tomatoes
- 2 cups of vegetable stock
- ½ cup JOI plant base (almond or cashew)
- 5-6 fresh basil leaves (or use 1 teaspoon of dried basil)
- ½ a medium onion, diced
- 4-5 cloves of garlic (to taste)
- 2 teaspoons of salt
- 1 teaspoon of pepper
- In a large pot, heat the olive oil over medium heat and saute the onion for 4-5 minutes, then add the garlic and cook for another 1-2 minutes, until fragrant.
- Add the tomatoes, vegetable stock, salt and pepper. Stir to combine.
- Bring to a gentle boil, then reduce heat to low and allow to simmer for 15 minutes in order to allow flavors to combine.
- Add in the JOI plant base and sliced basil leaves and, if using, blend with an immersion blender until smooth. Otherwise, very carefully transfer the soup to a high speed blender and blend until smooth.
- Enjoy topped with extra basil!
