If you're looking for a sweet and decadent treat to make for yourself, a loved one or a friend, look no further! These chocolate covered strawberry cashew bites are the perfect combination of rich dark chocolate, creamy cashew, and tart strawberry jam. Let's make them.

This Recipe is Easy to Make.

With just a few simple ingredients, you can make this recipe at home. In fact, you'll be using ingredients that you probably already have in your pantry:

  • Dark chocolate chips (we use vegan or dairy-free chips)
  • Coconut oil
  • JOI Cashew or Almond Milk Concentrate
  • Strawberry jam

The only equipment you need to make these bites is a silicon mold.  They make popping out the treats a total breeze.

But if you don't have fancy heart-shaped molds, no worries.  Use your cannellé or madeleine silicon molds if you have those.  Or go for a Reese's peanut butter cup shape and make these in a cupcake tin (or mini cupcake tin).  If using these, be sure to grease the molds with coconut oil first.  Pop them in the freezer for 15 minutes before unmolding to ensure they are firm.  Then use the tip of a sharp knife to extract them.

You can use JOI almond milk concentrate instead of cashew paste to add a different flavor profile. If you use almond, consider adding 1/4 teaspoon almond extract to the melted chocolate mixture to enhance the almond profile.

Tired of strawberry? Try using a different flavor of jam, such as raspberry or blueberry.  Or get creative with a piece of crystallized ginger or lavendar-scented preserves.

Use your favorite chocolate.  We love bittersweet, semi-sweet and dark chocolate.  So many great vegan chocolate options are available too.  

We also love decorating these with some "strawberry powder". Before the top chocolate layer is set, blitz a cup of freeze dried strawberries in your food processor and use them to decorate!  Or use whatever sprinkles you have in your baking bin.
