Gellan gum isn’t necessary for great oat milk. It’s a synthetic thickener used to prevent separation and extend shelf life in commercial oat milk, but it has no nutritional value. Some studies link it to gut issues and microbiota disruption. A good oat milk made from whole oats doesn’t need it.

Dipotassium phosphate is a functional additive. It’s used to prevent oat milk from curdling in coffee, but research suggests high phosphate intake may cause kidney problems and organ calcification over time. It offers no nutritional benefit and isn’t needed in whole-ingredient oat milk.
