Gums are far from harmless. Gums like guar and locust bean are added to prevent separation but have no nutritional value. They can cause bloating and discomfort, and in large doses, guar gum has been linked to intestinal blockages.

It’s all about almond content. Most almond milks contain just 2–4% almonds, so the protein drops to 1 g per cup. Real almonds have 6 g of protein per ounce, making a higher almond content the key to more protein.

The base is where the real nutrition lies. Almond milk powder is spray-dried for convenience, but almond milk base is cold-milled whole almonds, keeping more natural fats, fiber, and enzymes for creamier milk.

Blanching is key to smoother milk. Blanched almonds have their skins removed, eliminating bitterness and grit. This process results in smoother, creamier milk and improves digestibility.
