Why make frozen yogurt bark?

Frozen yogurt bark looks like something from a dessert case and takes about 10 minutes of real work: spread yogurt on a tray, scatter fruit, freeze, snap. This version adds a marbled swirl of JOI Cashew Base. You squeeze thin lines over the yogurt, then drag a toothpick through them, and the mild, subtly sweet cashew freezes into creamy ribbons that soften the tang of the yogurt. Berries and pistachios add color and crunch. Expect a cold, creamy snack that holds its shape for a few minutes out of the freezer, best enjoyed straight away. Want to go fully homemade? Why this recipe is so easy

  • No cooking, one sheet pan.

  • The swirl looks impressive and takes 30 seconds.

  • Make a batch on Sunday for the week.

Recipe card

  • Servings: about 12 pieces

  • Prep time: 10 minutes

  • Freeze time: 3 hours minimum

  • Total time: 3 hours 10 minutes

  • Category: Snack, Dessert

  • Dietary: vegan and dairy-free with plant-based yogurt and dairy-free chocolate; gluten-free

  • Equipment: rimmed baking sheet (about 9x13 inches), parchment paper, offset spatula, toothpick

Ingredients

  • 2 cups thick dairy-free Greek-style yogurt (plain or vanilla)

  • 2 tbsp maple syrup (skip if using vanilla yogurt)

  • 1/2 tsp vanilla extract

  • 3 tbsp JOI Cashew Base, used directly for the swirl

  • 1 cup mixed berries (raspberries, blueberries, sliced strawberries), patted dry

  • 2 tbsp chopped pistachios

  • 1 oz dairy-free dark chocolate, melted, optional

  • Pinch of flaky salt

Directions

  1. Line a rimmed baking sheet with parchment.

  2. Stir the yogurt, maple syrup and vanilla together. Spread it on the parchment in an even layer about 1/4 inch thick (roughly a 9x11-inch rectangle).

  3. Shake the Cashew Base bottle, then squeeze thin lines across the yogurt about 1 inch apart. Drag a toothpick through the lines in the opposite direction to marble them. Do not overmix.

  4. Scatter the berries and pistachios on top and press lightly so they stick. Drizzle with melted chocolate, if using, and add a pinch of flaky salt.

  5. Freeze uncovered on a level shelf for at least 3 hours, until completely firm.

  6. Lift the bark out on its parchment, break or cut into about 12 pieces and serve right away.

Why the JOI squeeze bottle works here

A marbled swirl needs thin, parallel lines. Squeeze bottles are what pastry cooks use for exactly this, and the base comes in one. A spoon would leave blobs that freeze into hard pockets instead of ribbons.

Customizations and substitutions

Common mistakes

  • Thin yogurt: runny yogurts freeze icy. Use a thick, Greek-style plant yogurt.

  • Wet berries: they create ice crystals. Pat dry.

  • Spreading too thin: under 1/4 inch it shatters when you cut it.

Storage

  • JOI base: pantry, cool and dark.

  • Bark: store pieces in a freezer bag or container with parchment between layers. Frozen food stays safe indefinitely at 0°F, but quality is best within a few weeks (USDA freezing guidance).

  • Serve straight from the freezer; it softens within about 5 to 10 minutes.

Frequently asked questions

  1. What yogurt is best for dairy-free yogurt bark? A thick, Greek-style plant yogurt freezes creamier than thin styles.

  2. Why is my yogurt bark icy? The yogurt was thin or the fruit was wet. Choose a thicker yogurt and dry the fruit.

  3. How long does yogurt bark take to freeze? At least 3 hours, or overnight.

  4. Can I use frozen berries? Yes, but add them straight from frozen and press them in quickly.

Make JOI part of your kitchen

One bottle of JOI Cashew Base can swirl a tray of bark, blend smoothies and make about 4 quarts of cashew milk.
